Spinach Egg Toast

Fast and tasty breakfast with a little oomph: whole grain toast spread with Dijon or whole grain mustard, ½ oz crumbled feta or goat cheese, a sunny side up egg, and some wilted spinach. Yay protein for breakfast! Thanks to Smitten Kitchen for the recipe.

High Protein Breakfast Burrito

My fave savory breakfast burrito: whole wheat tortilla, Laughing Cow cheese spread, ¼ c black beans, 1 egg & 2 egg whites scrambled, 1 T salsa, 1 T Greek yogurt, and abt ½ c spinach (which I picked from my garden!). 300 cals, 34 carbs, 18 fiber, 9.5 fat, 30 protein. Also, it’s HUGE.
