Pumpkin Protein Pancakes

These pumpkin pancakes are DELICIOUS! The pumpkin flavor and spices shine through nicely, but they’re not overly heavy or cloying. The extra protein and whole grain in the mix makes them really filling, but not too heavy. My kids had no idea they were eating something “healthy,” and they all devoured them!

  • 2 cups Kodiak Power Cakes Mix
  • 2 cups almond milk
  • 4 large eggs
  • 1/2 c canned pumpkin
  • 2 t ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 2 to 4 T stevia 


  1. Preheat griddle or pan to medium heat.
  2. Whisk power cakes mix, water, egg, pumpkin, spices, and stevia together. Using 1/4 cup, pour batter onto pan. Should make 16 pancakes. Once small bubbles form on top of batter, flip.
  3. Top with butter, if desired, and a drizzle of maple syrup or agave.

These suckers are a whopping 236 calories for 3 pancakes, 32g carbs and 14g protein. I ate mine with a couple of scrambled eggs and I was STUFFED.
