Chicken with Potatoes, Wine & Olives

One-pan Chicken with Potatoes, Wine & Olives: This was so fabulous and SO easy! Throw everything in one pot and it cooks in an hour. I’m really picky about flavor, and these were so great together and nicely balanced. Also under 500 calories/serving and well balanced for insulin resistance. Hooray!
